Ingredients:
- 1 cup (250 g)ricotta cheese, drained
- 2/3 cup (100 g) whole-wheat (wholemeal) flour
- 2 tablespoons bran, toasted
- 2 cups (300 g) all-purpose (plain) flour
- 1/4 cup (60 ml) exra-virgin olive oil
- 3/4 cup (90 g) freshly grated Parmesan
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 cup (60 ml) milk + extra, as required
Procedure:
- Place all the ingredients in a large bowl and mix well, adding enough extra milk to make a smooth, firm dough
- Shape the dough into a ball
- Wrap in plastic wrap (cling film) and chill in the refrigerator for 30 minutes
- Preheat the oven to 400 F (200 C/gas 6)
- Oil three baking sheets
- Shape the dough into balls about the size of walnuts. Arrange on the prepared baking sheets
- Bake until golden brown, about 15 minutes
- Serve warm
