Beef Skewers with Snow Peas

Ingredients:
1 1/2 lb (750) ground (minced) beef
1 small white onion, finely chopped
1 clove garlic, finely choppedt
1 dry red chile pepper, crumbled
1 tablespoon finely chopped parsley
Salt and freshly ground black pepper
8-10 snow peas (sugar peas), cut into short lengths
1/2 cup (125 ml) water
1/4 cup (60 ml) extra-virgin olive oil
1 1/2 cups (375 g) plain yogurt
1 tablespoon finely chopped mint
Procedure:
Place the beef in a large bowl and stir in the onion, garlic, chile, pepper, and parsley. Season with salt and pepper
Shape into balls about the size of a wallnut
Preheat the broiler (grill) on high setting
Heat the water and oil in a large frying pan over medium heat. Carefully add the meatballs and simmer until cooked through 8-10 minutes
Cook the snow peas in a small pan of salted water until just tender, about 5 minutes. Drain well
Thread the beef balls onto wooden skewers-3 or 4 skewer-alternating each meatball with a piece of snow pea
Season the yogurt with salt, pepper, and mint
Serve the skewers hot with the yogurt sauce
