Cheese Fritters

Ingredients:
  • 2 large eggs + 2 large egg whites
  • Salt and freshly ground white pepper
  • 8 oz (250 g) freshly grated Gruyere or Cheddar cheese
  • 6 tablespoons freshly grated Parmesan
  • 1/2 cup (100 g) all-purpose (plain) flour
  • 2 cups (500 ml) frying oil
  • 1 cup (150 g) fine dry bread crumbs

Procedure:
  1. Place three egg whites in a medium bowl with a pinch of salt and beat until stiff peaks form
  2. Fold in both cheeses. Add half the flour. Season with salt and pepper
  3. shape the mixture into balls the size of walnuts
  4. Beat the remaining egg and yolk
  5. Dip the fritters in the egg. Roll in the remaining flour and then in the bread crumbs. Heat the oil in a deep-fryer or frying pan to very hot
  6. Fry the fritters in batches until golden brown all over. Remove with a slotted spoon and drain on paper towels
  7. Serve hot
