Cheese Savories with Onion and Olives

Ingredients:
  • 1 quantity pizza dough
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon butter
  • 1 large white onion, finely chopped
  • 1 cup (120 g) freshly grated emmenthal or Cheddar cheese
  • 2 oz (60 g) black olives, pitted and chopped
  • 4 anchovy fillets, chopped (optional)

Procedure:
  1. Prepare the pizza dough
  2. Preheat the oven to 450 F (225 C/gas 8)
  3. Oil 2 large baking sheets
  4. Heat the oil and butter in a medium frying pan over medium heat. Saute the onion until softened, about 5 minutes
  5. Roll out the dough on alightly floured work surface into a large square about 12-inch (1-cm) thick
  6. Sprinkle the dough with the onion mixture, cheese, oilves and anchovies, if using
  7. Roll the dough up carefully into a log
  8. Cut into 1/2-inch (1-cm) thick slices. Place on the prepared baking sheets, making sure they are well spaced
  9. Bake until risen and golden brown, about 20 minutes
  10. Serve hot or at room temperature
