Ingredients:
- 1 quantity pizza dough
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon butter
- 1 large white onion, finely chopped
- 1 cup (120 g) freshly grated emmenthal or Cheddar cheese
- 2 oz (60 g) black olives, pitted and chopped
- 4 anchovy fillets, chopped (optional)
Procedure:
- Prepare the pizza dough
- Preheat the oven to 450 F (225 C/gas 8)
- Oil 2 large baking sheets
- Heat the oil and butter in a medium frying pan over medium heat. Saute the onion until softened, about 5 minutes
- Roll out the dough on alightly floured work surface into a large square about 12-inch (1-cm) thick
- Sprinkle the dough with the onion mixture, cheese, oilves and anchovies, if using
- Roll the dough up carefully into a log
- Cut into 1/2-inch (1-cm) thick slices. Place on the prepared baking sheets, making sure they are well spaced
- Bake until risen and golden brown, about 20 minutes
- Serve hot or at room temperature
