Ingredients:
3 tablespoons butter
1 shallot, finely chopped
2 large slightly underripe pears, peeled, cored, and sliced
1/4 cup (60 ml) sweet white wine
1/2 teaspoon ground cinnamon
8-10 slices sandwich bread
8 oz (250 g) brie, sliced
Salt and fresh ground black pepper
1 tablespoons finely chopped parsley
2/3 cup (75 g) chopped hazelnuts
Procedure:
Preheat the broiler (grill) in high setting
Melt the butter in a frying pan over medium heat. Add the shallot and saute until transluscent, 3-4 minutes. Set aside
Add the pear to the frying pan and saute for 2 minutes
Add the wine and let it evaporate for 1 minute. Remove from the heat and drain the pears on paper towels. Sprinkle with the cinnamon and let cool slightly
Toast the bread under the broiler until goledn brown
Lay the brie on the toasted bread. Add the layer of shallots and a layer of pear
Broil until the cheese is melted, 2-3 minutes. Season with salt and pepper
