Cherry Tomatoes with Tuna, Mayo, and Walnuts

Ingredients:
  • 24 cherry tomatoes
  • Salt
  • 5 oz (150 g) canned tuna, drained
  • ¼ cup (60 g) mayonnaise
  • 1 tablespoon salt-cured capers, rinsed
  • 2 anchovy fillets, rinsed
  • 2 cloves garlic, peeled
  • 2 sprigs fresh oregano
  • Handful fresh basil leaves
  • 1/3 cup (50 g) shelled walnuts
  • 1 ice cube
  • ½ cup (60 g) freshly grated parmesan

Procedure:
  1. Slice the tops of the tomatoes. Use a teaspoon to scoop out the fresh seeds. Sprinkles the insides with salt
  2. Drain the tomatoes cut-side down on paper towels for 15 minutes
  3. Place the tuna, mayonnaise, capers, anchovies, garlic, oregano, basil, walnuts, and the ice cube in the bowl of a food processor. Chop until smooth
  4. Season with salt and stir in the Parmesan. Mix well. Fill the tomatoes with this mixture
  5. Arrange on a serving plate and serve
