Chicken Satay

Ingredients:
  • 6 shallots
  • 6 cloves garlic
  • 1-2 fresh red chile peppers, sliced
  • 1-inch (2.5-cm) piece ginger root, peeled
  • 2 teaspoons coriander seeds
  • 1 teaspoon black peppercorns
  • 3 candlenuts
  • 1 teaspoon dried shrimp paste
  • 2 cloves
  • 3 tablespoons peanut oil
  • 1 1/2 lb (750 g) ground (minced) chicken breast
  • 1 cup (150 g) freshly grated coconut
  • 2 tablespoons fresh lime juice
  • Salt and freshly ground balck pepper
  • 2 dried chile peppers, crumbled

Procedure:
  1. Place the shallots, garlic, chillies, ginger, coriander, peppercorns, candlenuts, shrimp paste, and cloves in a food processor and chop until smooth
  2. Heat the oil in a work or asucepan over medium-high heat and saute the spicy mixture for 5 minutes. Set aside to cool
  3. Place the chicken in a bowl with the spicy mixture, coconut, lime juice,salt, pepper, and chillies and mix well
  4. Press the chicken mixture around 12 wooden skewers and grill over a barbewue or under a preheated broiler (grill) until the chicken is well cooked, 10-15 minutes
  5. Serve hot
