Ingredients:
- 1 red bell pepper (capsicum)
- 1 yellow bell pepper (capsicum)
- 1 clove garlic, finely chopped
- 4 leaves, basil, torn
- 2 tablespoons pitted balck olives, coarsely chopped
- 1/4 cup (60 ml) extra-virgin olive oil
- Salt and freshly ground black pepper
- 1 baguette (Frech Loaf), sliced and toasted
Procedure:
- Broil (grill)or roast the bell peppers whole until the skins are balckened
- Wrap them in a paper bag for 5 minutes, then remove the skins and seeds
- Rinse carefully and dry on a clean cloth
- Slice the bell peppers into small, thin strips and place in a large bowl. Add the garlic, basil, olives, oil, salt and pepper and marinate in the refrigerator for 4 hours
- Spread the bell pepper mixture on the freshly toasted bread and serve
