Crostini with Bell Peppers

Servings: 6 » Preparation: 15 mins + 4hr to marinate » Level: Easy
Ingredients:
  • 1 red bell pepper (capsicum)
  • 1 yellow bell pepper (capsicum)
  • 1 clove garlic, finely chopped
  • 4 leaves, basil, torn
  • 2 tablespoons pitted balck olives, coarsely chopped
  • 1/4 cup (60 ml) extra-virgin olive oil
  • Salt and freshly ground black pepper
  • 1 baguette (Frech Loaf), sliced and toasted

Procedure:
  1. Broil (grill)or roast the bell peppers whole until the skins are balckened
  2. Wrap them in a paper bag for 5 minutes, then remove the skins and seeds
  3. Rinse carefully and dry on a clean cloth
  4. Slice the bell peppers into small, thin strips and place in a large bowl. Add the garlic, basil, olives, oil, salt and pepper and marinate in the refrigerator for 4 hours
  5. Spread the bell pepper mixture on the freshly toasted bread and serve
