Fresh Celery with Blue Cheese and Ricotta

Ingredients:
  • 8 oz (250 g) fresh ricotta cheese, drained
  • 4 oz (125 g) blue cheese, crumbled into small pieces
  • ¼ cup (60 g) milk
  • 2 cloves garlic, finely chopped
  • 1 tablespoon finely chopped chives
  • 1 tablespoon extra-virgin oil
  • Salt and freshly ground black pepper
  • 10 large stalks very fresh celery
  • 1 tablespoon finely chopped parsley

Procedure:
  1. Place the ricotta in a bowl. Add the blue cheese and milk and mash to obtain a fairly smooth cream
  2. Add the garlic, chives, oil, salt, and pepper. Mix well
  3. Cover and chill in the refrigerator for1 hour
  4. Trim the celery stalks and remove any tough external fibers
  5. Cut into pieces about 3 inches (8 cm) long
  6. Fill the celery with the cheese mixture, sprinkle with the parsley and serve
