Fritters with Mozzarella and Tomatoes

Ingredients:
  • 1 quantity pizza dough
  • 1/4 oz (400 g) firm ripe tomatoes
  • 4 anchovy fillets, chopped
  • 6 oz (180 g) fresh mozzarella cheese, cut into small cubes
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper
  • 2 cups (500 ml) oil, for frying

Procedure:
  1. Prepare the pizza dough
  2. Blanch the tomatoes in boiling water for 2 minutes. Drain and peel
  3. Place the anchovies, tomatoes, mozzarella, and oregano in a bowl. Season with salt and pepper, mix well
  4. Roll out the dough on a lightly floured surface to 1/4 inch (5 mm) thick. Cut into 4-inch (10 cm) disks using a large glass or cookie cutter
  5. Place a little of the filling in the center of each disk. Moisten the edges of the dough and fold it in half to cover the filling. Pinch the edges together to seal. Heat the oil in a deep-fryer or frying pan to very hot
  6. Fry the fritters in batches until puffed and golden brown. Remove with a slotted spoon and drain on paper towels
  7. Serve hot
