Green Olives with Spicy Dressing

Ingredients:
  • 12 oz (350 g) green olives, preserved in brine, pitted
  • 4 cloves garlic, peeled
  • 1 sprig fresh rosemary
  • 1 teaspoon oregano
  • 1-2 dried red chile peppers, crumbled
  • ¼ cup (60 g) extra-virgin olive oil

Procedure:
  1. Rinse the olives in cold water and pat dry with paper towels
  2. Lightly crush the olives with a meat-pounding mallet
  3. Use the same instrument to bruise the cloves of garlic
  4. Place the olives and garlic in a serving bowl
  5. Remove the rosemary leaves from the sprig and chop coarsely
  6. Add the olives, together with the oregano, chile peppers, and oil
  7. Mix well and cover. Set aside in a cool place (not the refrigerator) for at least 2 hours before serving
  8. Serve with freshly baked bread
