Green Olives with Spicy Dressing

Ingredients:
12 oz (350 g) green olives, preserved in brine, pitted
4 cloves garlic, peeled
1 sprig fresh rosemary
1 teaspoon oregano
1-2 dried red chile peppers, crumbled
¼ cup (60 g) extra-virgin olive oil
Procedure:
Rinse the olives in cold water and pat dry with paper towels
Lightly crush the olives with a meat-pounding mallet
Use the same instrument to bruise the cloves of garlic
Place the olives and garlic in a serving bowl
Remove the rosemary leaves from the sprig and chop coarsely
Add the olives, together with the oregano, chile peppers, and oil
Mix well and cover. Set aside in a cool place (not the refrigerator) for at least 2 hours before serving
Serve with freshly baked bread
