Little Pizzas with Tomato and Anchovies

Ingredients:
  • 6 oz (180 g) frozen puff pastry, thawed
  • 2-3 large ripe tomatoes, thinly sliced
  • 20 anchovy fillets preserved in oil, drained and halved
  • 1/2 teaspoon dried oregano
  • Salt and freshly ground black pepper

Procedure:
  1. Preheat the oven to 350 F(180 C/gas 4)
  2. Oil in a large baking sheet
  3. Roll out the pastry on a lighty floured work surface to 1/4 inch (5 mm) thick
  4. Cut the pastry into 2 1/2-inch (6-cm) disks, using a cookie cutter or a glass. Arrange the disks on the baking sheet
  5. Top each disc with a slice of tomato, half an anchovy fillet, and a pinch of oregano. Season with salt and pepper
  6. Bake until the pastry is golden brown, 10-15 minutes
  7. Serve hot
