Pastry Hearts with Pine Nuts and Parmesan

Ingredients:
  • 6 oz (180 g) frozen puff pastry, thawed
  • 1 large egg yolk, beaten
  • 1/4 cup (45 g) pine nuts
  • 1/2 cup (60 g) freshly grated Parmesan

Procedure:
  1. Preheat the oven to 350 F(180 C/gas 4)
  2. Oil in a large baking sheet
  3. Roll out the pastry on a lighty floured work surface to 1/4 inch (5 mm) thick
  4. Brush with the egg yolk. Sprinkle with the pine nuts and Parmesan
  5. Roll up the pastry starting from one edge and rolling until you reach the center. Roll up the remaining pastry starting from the opposite edge to make a double roll
  6. Chill the pastry roll in the refrigerator for 45 minutes
  7. Use a sharp knife to cut into slices 1/4 inch (5 mm) thick. Arrange on the baking sheet
  8. Bake until golden brown, 10-15 minutes
  9. Serve hot or at room temperature
