Pea Fritters

Ingredients:
  • 1 lb (500 g) frozen pea
  • 1 cup (150 g) rice flour
  • 1/2 cup (125 g) ricotta cheese, drained
  • 1/2 cup (60 g) freshly grated Parmesan
  • 1 tablespoon finely chopped basil
  • 1 tablespoon finely chopped marjoram
  • Salt and freshhly ground black pepper
  • 1/3 cup (50 g) all-purpose (plain) flour
  • 1 large, lightly beaten
  • 1/2 cup (75 g) fine dry bread crumbs
  • 2 cups (500 ml) frying oil

Procedure:
  1. Boil the peas in a pot of salted boiling water until tender, 10 minutes
  2. Chop in a food processor until smooth
  3. Place in a bowl and stir in the rice flour, ricotta, Parmesan, basil, marjoram. Season with salt and pepper and mix well
  4. Shape the mixture into fritters about the size of a walnut. Dredge into the flour, dip in the beaten egg, and roll in the bread crumbs
  5. Heat the oil in a dee-fryer or frying pan to very hot
  6. Fry the fritters in batches until golden brown all over. Remove with a slotted spoon and drain on paper towels
  7. Serve hot
