Pizza Triangles with Onion, Cheese, and Olives

Ingredients:
  • 1 quantity pizza dough
  • 4 medium red onions
  • 3/4 cup (180 ml) water
  • 4 tablespoons extra-vrigin olive oil
  • 1 tablespoon finely chopped thyme
  • 1 tablepoon finely chopped rosemary
  • Salt and freshly ground balck pepper
  • 1 1/4 cups (310 g) fresh creamy cheese (goat cheese, mozzarella, stracchino)
  • 4-6 tablespoons pitted black olives

Procedure:
  1. Prepare the pizza dough
  2. Peel the onions and slice thinly
  3. Cook the onions with the water, 2 tablespoons of oil, and the thyme and rosemary in a large frying pan over medium heat until all liquid has evaporated, 5-10 minutes
  4. Season with salt, remove from the heat, and let it cool
  5. Preheat the oven to 450 F ( 220 C/gas 8)
  6. Oil a large baking sheet
  7. When the rising has elapsed, roll the dough out about 1/8 inch (3 mm) thick and cut into triangles
  8. Spread the cheese, olives, and onion mixture on each triangle. Season with pepper and drizzle with the remaining oil
  9. Transfer the triangles to the baking sheet
  10. Bake until the pizza dough is golden brown, about 15 minutes
  11. Serve hot or at room temperature
