Potato Fritters with Ricotta and Oats

Ingredients:
  • 2 cups (400 g) mashed potato
  • 3 1/2 cups (350 g) old-fashioned rolled oats
  • 3/4 cup (180 g) ricotta cheese, drained
  • 1 large egg, lightly beaten
  • 2 tablespoons freshly grated Parmesan
  • 2 tablespoons finely chopped Parsley
  • 2 tablespoons sesame seeds
  • Salt and freshly ground white pepper
  • 1/3 cup (90 ml) milk
  • 2 large egg yolks, lightly beaten
  • 1 cup (150 g) fine dry bread crumbs
  • 1/4 cup (60 ml) extra-virgin olive oil

Procedure:
  1. Preheat the oven to 350 F (180 C/gas 4)
  2. Place the potato in a large bowl. Add the oats, ricotta, egg, Parmesan, parsley, and sesame seeds. Season with salt and pepper. Add enough of the milk to make a soft dough
  3. Shape the mixture into balls the size of a walnuts
  4. Dip the balls in the egg yolks, followed by the bread crumbs, then flatten slightly
  5. Arrange on an oiled baking sheet and drizzle with the oil
  6. Baked until lightly browned, about 20 minutes
  7. Serve hot
