Ingredients:
2 cups (400 g) mashed potato
3 1/2 cups (350 g) old-fashioned rolled oats
3/4 cup (180 g) ricotta cheese, drained
1 large egg, lightly beaten
2 tablespoons freshly grated Parmesan
2 tablespoons finely chopped Parsley
2 tablespoons sesame seeds
Salt and freshly ground white pepper
1/3 cup (90 ml) milk
2 large egg yolks, lightly beaten
1 cup (150 g) fine dry bread crumbs
1/4 cup (60 ml) extra-virgin olive oil
Procedure:
Preheat the oven to 350 F (180 C/gas 4)
Place the potato in a large bowl. Add the oats, ricotta, egg, Parmesan, parsley, and sesame seeds. Season with salt and pepper. Add enough of the milk to make a soft dough
Shape the mixture into balls the size of a walnuts
Dip the balls in the egg yolks, followed by the bread crumbs, then flatten slightly
Arrange on an oiled baking sheet and drizzle with the oil
