Ricotta Fritters

Ingredients:
  • 1 1/2 cups (375 g) ricotta cheese drained
  • 2 1/2 cups (200 g) fresh bread crumbs
  • 1/2 cup (60 g) freshly grated Parmesan
  • 1 tablespoon finely chopped parsley
  • Salt
  • 1/2 cup (60 g) fine dry bread crumbs
  • 2 cups (500 ml) frying oil

Procedure:
  1. Mix together the Ricotta, fresh bread crumbs, Parmesan, parsley, and salt in a large bowl
  2. Shape mixture into balls the size of walnuts. Roll the balls in the dry bread crumbs
  3. Heat the oil in a deep-fryer or frying pan to very hot
  4. Fry the fritters in batches until golden brown all over. Remove with a slotted spoon and drain on paper towels
  5. Serve hot
