Smoked Salmon Rolls with Goat Cheese

Ingredients:
12 mini bread rolls
3/4 cup (180 g) soft fresh goat cheese
4 tablespoons cream cheese
1 tablespoon finely chopped parsley
2 teaspoon snipped chives
2 tablespoons extra-virgin olive oil
Salt and freshly ground black pepper
8 oz (250 g) smoked salmon
Procedure:
cut the rolls in half and remove some of the soft part from inside
Use a fork to beat together the goat cheese and cream cheese in a medium bowl
Mix in the parsley, chives, and oil. Season with salt and pepper
Fill the rolls with the cheese mixture and cover with a slice of smoked salmon
Serve at once
