Smoked Salmon Rolls with Goat Cheese

Ingredients:
  • 12 mini bread rolls
  • 3/4 cup (180 g) soft fresh goat cheese
  • 4 tablespoons cream cheese
  • 1 tablespoon finely chopped parsley
  • 2 teaspoon snipped chives
  • 2 tablespoons extra-virgin olive oil
  • Salt and freshly ground black pepper
  • 8 oz (250 g) smoked salmon

Procedure:
  1. cut the rolls in half and remove some of the soft part from inside
  2. Use a fork to beat together the goat cheese and cream cheese in a medium bowl
  3. Mix in the parsley, chives, and oil. Season with salt and pepper
  4. Fill the rolls with the cheese mixture and cover with a slice of smoked salmon
  5. Serve at once
