Spinach Frittata with Cherry Tomatoes

Ingredients:
  • 2 lb (1 kg) frozen spinach
  • 7 large eggs
  • 1/2 cup (60 g) freshly grated Parmesan
  • Salt and freshly ground black pepper
  • 6 cherry tomatoes, thinly sliced

Procedure:
  1. Preheat the oven to 400 F (200 C/gas 6)
  2. Oil a 10 inch (25 cm) square baking dish
  3. Cook the spinach in a medium saucepan of lightly salted water over medium heat until tender, 3-5 minutes. Drain well and squeeze out the excess moisture. Chop coarsely
  4. Break 5 of the eggs into a large bowl and beat until frothy. Add the Parmesan and season with salt and pepper. Mix well then pour the mixture into the prepared dish
  5. Bake until the egg is set, 5-10 minutes
  6. Break the remaining eggs into a large bowl and beat until frothy. Add the spinach and season with salt and pepper. Mix well
  7. Remove the Frittata from the oven and spread with the spinach mixture. Place the tomatoes on top and bake for 5 minutes more, or until cooked through
  8. Cut into squares and serve hot
